I love how tender and creamy the cauliflower gets after simmering in the slow cooker. It has a nice mild flavor. If you wanted to make a reduced fat version, you could substitute milk in for the cream, but I really like the cream. After all, you are eating a lot of healthy vegetables with this soup!
