Thanks for the tip about adding the thai curry paste. I love everything that is sweet and spicy! There's something about blended soups like this that are so elegant. The bright color is very pretty, and this stuff is very freezer friendly! (if you even have any leftovers) Soups like this are great for lunch at the office, since you can put them in an insulated coffee mug and sip it right at your desk!
