This is such a great way to use up that holiday ham, but if you don't have that on hand, those ham steaks work great in this soup too. I always buy them on sale and keep them in my freezer (they lay flat and don't take up a lot of space) for comfort foods like this. The barley and lentil combination has such a great hearty texture, and the veggies used are so colorful and pleasing to the eye!
