Slow Cooker Italian Sausage Soup
Slow Cooker Italian Sausage Soup is an easy dish you can throw together in a flash. If you need something to warm you up and keep you full, this is the soup recipe for you. If you have about 15-20 minutes of time to prep, you can let this dish cook while you're out for a couple hours. Made with hearty ingredients like Italian sausage, beans, pasta, and veggies, this recipe is as simple as throw and go. Mix all your ingredients together and leave it alone to cook for two hours. Presto. Dinner is served.

Ingredients
- 1 yellow onion
- 2 cloves garlic (minced)
- 1 pound ground Italian sausage
- 1 (15-ounce) can cannellini beans, rinsed
- 1 (28-ounce) can chicken broth
- 1 (29-ounce) can Italian stewed tomatoes
- 1 1/2 cup rotini pasta
- 2 cups baby spinach
Instructions
Dice the onion, and mince the garlic, Meanwhile, heat a skillet on the stovetop (low-medium heat; enough to brown your sausage).

Simmer your pound of ground Italian sausage and then mix in the onion and garlic. Combine and stir frequently until cooked.

Add the mixture to the crock of your slow cooker.

Next, add in cannellini beans, chicken broth, Italian stewed tomatoes, and rotini pasta. Stir together to combine.

Cook on HIGH for 2 hours.

Add 2 cups of baby spinach just before serving (take care, otherwise, spinach will become too wilted and mushy).

Sausage and spinach or any type of greens together in a recipe is such a good combination. This soup makes me think of minestrone and it's so easy to make that it would be great any time of the year. You can even use some lasagna noodles and cottage cheese to make this a little more hearty if you wanted to.
