I have made homemade soups using chicken breasts before, but the broth never gets quite the same richness and depth of flavor as using parts of the whole bird. The meat stays nice and tender too. Using the frozen veggies really makes it a no - brainer, since you don't have to peel and chop!

This is such an easy soup recipe! I love the simplicity of rotisserie chicken and slow cookers make wonderful soups! I want to make this next weekend with a salad and a loaf of French bread made in my bread machine. The nice thing about slow cooker soups is that they don't have to be just for winter meals.
