Slow Cooker Sausage, White Bean and Spinach Soup

Slow Cooker Sausage, White Bean and Spinach Soup has a little of everything to help appeal to the masses. If you use dried beans you have to prepare them first to be used in your easy slow cooker soup. You can soak them overnight or do a quick soak. Then you will pour a 1 pound bag into a pan with 8 cups of water. Bring to a boil and let boil 2 minutes. Remove from the heat and cover for an hour. Then your beans are ready to be added to your slow cooker.

I love soup especially a full bodied soup such as this. I has three of my favorite ingredients, beans, sausage and spinach. Good after a long day at work. Can't wait to try it.

I've made a recipe similar to this and it was a big hit, so I'm really excited to try this in the crock pot! To make this recipe even easier, you could use canned beans or use an electric pressure cooker to cook the beans more quickly. This would make a great weeknight meal served with some crusty bread or a salad! Yum!
