Slow Cooker Mexican Chicken Nachos is a great filling dish to serve while everyone cheers on their favorite team. This delicious dish that includes sour cream, diced tomatoes, green chilies, corn and chicken broth, among other spices, has a lot of flavor to give. What is your favorite cheese to use in this recipe? I think that cheddar would work well, but then again so might pepperjack or mozzarella. We also like a nice, smoked provolone. I like that the chicken gives you a healthier dish than using beef or pork. It is better for the waist line.
