Hope's Italian Pot Roast
This easy pot roast recipe is simple yet hearty. Hope's Italian Pot Roast is bursting with great beef flavor and tender chunks of sweet potatoes. The roast is seasoned with Italian seasoning and garlic. You can cook this roast in whatever you have on hand, whether it is beef stock, water, or red wine. Ingredients
- 3 to 4 pound English or chuck roast
- 1 1/2 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup beef stock or red wine or water
- 4 cups sweet potatoes, peeled and diced
Instructions

Line your crock with a PanSaver Slow Cooker Liner. Place the roast into the bottom of your crock.

Mix together the Italian seasoning, garlic powder, salt, and pepper. Sprinkle half of this mixture over your roast. Turn the roast over and sprinkle that side with the remaining seasoning mixture. Pour in the beef stock.

Cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours.

Can I just use regular potatoes or maybe some red potatoes in this dish? I am just not a fan of sweet potatoes at all. I love the flavor, but there is just something about the texture that throws my taste buds all off. I love the use of Italian seasoning in the dish. I think it adds another layer of flavor that you are not expecting.
