I am pleasantly surprised that you did not use corn in this dish. Is there a reason that you left it out? I think if people have to have corn for a true southwestern flavor, then it would work best if you roasted the corn and then added it to the wraps as you were making them. That way, people like me that don't like the corn can leave it off, and those that do can add it if they want, and as much as they want.
