Heaven Under a Palm Tree Chicken

Ingredients
- 2 (10-1/2-ounce) cans of Campbell's Condensed Chicken Broth
- 1 cup water
- 1 cup soy
- 2 cloves garlic
- 8 skinless, boneless chicken thighs cut into 1 1/2 inch pieces
- 1 medium or red pepper cut into 1 1/2 inch pieces
- 1 (20-ounce) can of pineapple chunks in juice, undrained
- 1 cup uncooked, regular long-grain white rice
Instructions
Stir the broth, water, soy, garlic, chicken, pepper, onions, pineapple with juice and rice in a 6-quart slow cooker.
Cover and cook on LOW for 7 to 8 hours or until the chicken is cooked through.
Optional: Sprinkle toasted almond slices before serving.

I'm not sure if this naming contest is still going on or not, but I might call it "Hot Chicks on the Beach!" I have been perusing some of other people's comments on this one, and it seems that many of them are in regard to the rice being too overcooked and mushy. I might either add the rice halfway through the cooking to alleviate this, or even use cooked rice that you add in toward the end. Hope this helps!

Not the Slow Cooker "Hang On Soupy" Chicken recipe as listed but a repeat of Heaven Under A Palm Tree Chicken recipe. Please correct this. This is the second recipe that does this.

I wish I'd read the review about the cooking time before doing this. After five hours, the rice was complete mush, there was no flavor, and I was left with a meal that was completely unsalvageable. Very disappointed, since it sounded so good. I may try this again, only doing it in the oven next time. Rice in the slow cooker is just to unpredictable when you can't be at home to constantly watch the cooking process.

Followed recipe exactly. Cooked 8 hours on low. Rice disintegrated, and there was not much flavor at all. Nobody liked it, will not make it again.

I would call this dish Asian Festival Chicken, because some of the ingredients have an Asian influence.

I would call this Ni Hao Ji (nee how jee) which is Chinese for "How Are You Chicken" basically, "Hello Chicken!" Or Wo Yao Chi Ji Rou meaning "I want to eat Chicken."
