Slow cooker chicken tacos are such a great idea! I never thought to add corn and lime, which would make the taco meat even better. I would cook the chicken this way and add the mixture to a big pile of tortilla chips, lettuce, tomatoes, olives, and jalapenos for chicken nachos.
