Notes
Contrary to popular belief, teriyaki does not solely refer to a type of sauce. It is actually a Japanese cooking technique. Using this method, meat is grilled or broiled in teriyaki — a mixture of soy sauce, mirrin (a low-alcohol content rice wine), and sugar. Red and white meat are commonly cooked this way in the West, while teriyaki fish is more popular in Japan. To make teriyaki meat the traditional way, the food is brushed with the sauce several times during the cooking process instead of being covered in the sauce at the end.
The word "teriyaki" is a hybrid of two Japanese words that mean "luster" and "grill/broil." The mirrin gives teriyaki sauce its trademark shiny finish. If you're looking for a great teriyaki chicken recipe but don't have time to make the sauce from scratch, it's available in almost every grocery store. I am glad you put in that you made the veggies in the crock pot, but they did turn out mushy. I like to have crunchy veggies when I think of stir fry, so I will not be adding them to the crockpot. Do you use any sauce on the veggies when stir frying them?
