What would you use in place of the mushrooms in this dish? I was thinking that cream of chicken soup instead of cream of mushroom. For the fresh mushrooms, I was thinking about using celery since you already have fresh peppers in the dish, but maybe broccoli would be a better choice. What would you use if you had to substitute something for the mushrooms?
