Wow! This sounds like a wonderful pie filling or a base for apple crisp! I make my own apple butter, and I just saw a recipe for apple butter with a splash of bourbon poured in. Boy, would that ever make this quick and easy to put into the slow cooker, since I don't usually have bourbon on hand. Jonathan apples are my favorite variety, and the cinnamon and bourbon are perfect complements to their tart-sweet flavor.
