Honestly, I went into this one knowing I probably wouldn't like it because I hate olives, but my boyfriend LOVES olives, so I made this for him to try. He LOVED it. Neither of us had ever tried spaghetti squash before, and it turns out we both like it. Instead of diced tomatoes, I used Italian seasoned stewed tomatoes because that is what I had in the cabinet. I wish I had used two cans, because there wasn't enough. I also wound up using Pepper Jack cheese because I forgot to buy the string cheese. Overall though, this recipe was a success in my house by my boyfriends standards anyway.
